- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and black pepper.
- Coat the chicken breasts with the marinade and let sit for at least 15 minutes (or up to 2 hours in the fridge).
- In a large skillet over medium heat, cook the marinated chicken for 5-7 minutes on each side, or until golden and cooked through. Remove and set aside.
- In the same skillet, add the rice and stir for 1-2 minutes to absorb the remaining flavors.
- Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- Return the cooked chicken to the skillet, cover, and heat through for 2-3 minutes.
- Garnish with chopped parsley and serve hot.
