Aurora Cupcakes

Aurora Cupcakes are whimsical, pastel-colored treats inspired by the Northern Lights. These vanilla-based cupcakes are swirled with dreamy shades of pink, purple, and teal, making them perfect for parties, themed events, or just a touch of magical indulgence.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • Food coloring (pink, purple, teal)
  • Buttercream frosting (store-bought or homemade)
  • Edible glitter or sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the dry ingredients.
  6. Divide the batter into three bowls and tint each with a different food coloring: pink, purple, and teal.
  7. Spoon small amounts of each colored batter into the cupcake liners, layering or swirling gently with a toothpick for a marbled effect.
  8. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  9. Frost with buttercream and decorate with edible glitter or sprinkles if desired.

Notes

  • Use gel food coloring for more vibrant shades without thinning the batter.
  • You can make your own buttercream using butter, powdered sugar, milk, and vanilla.
  • Store cupcakes in an airtight container for up to 3 days.
