Avocado Toast Bites

Miniature toasted bread rounds topped with creamy smashed avocado, bright cherry tomatoes, and a sprinkle of everything bagel seasoning—perfect, two-bite appetizers for brunches, parties, or quick snacks.

Ingredients

  • 1 ripe avocado, pitted and peeled
  • 1 tsp fresh lime juice
  • Pinch of kosher salt
  • Pinch of freshly ground black pepper
  • 1 small baguette (or 8 slices whole-grain sandwich bread), cut into 16 thin rounds or squares
  • 1 Tbsp extra-virgin olive oil (for brushing)
  • 8 cherry tomatoes, halved
  • 1 tsp everything bagel seasoning (optional but recommended)
  • Fresh cilantro or micro-greens, for garnish (optional)

Instructions

  1. Preheat the oven to 200 °C (400 °F). Arrange baguette rounds on a baking sheet and lightly brush the tops with olive oil.
  2. Toast in the oven for 4–5 minutes, or until golden and crisp. Remove and let cool slightly.
  3. In a small bowl, mash the avocado with lime juice, salt, and pepper until mostly smooth with a few chunks remaining.
  4. Spoon or pipe about 1 generous teaspoon of avocado mash onto each toasted round.
  5. Top each bite with half a cherry tomato, cut side up, and sprinkle with everything bagel seasoning.
  6. Garnish with cilantro or micro-greens if desired. Serve immediately.

Notes

  • For extra zing, add a dash of hot sauce to the mashed avocado.
  • Use gluten-free baguette or bread to make the bites gluten-free.
  • The toasted rounds can be made up to 4 hours ahead; store uncovered so they stay crisp.
  • If prepping in advance, keep the avocado mash in an airtight container with plastic wrap pressed directly on the surface to prevent browning.
