Avocado Toast with Heirloom Tomatoes

A fresh and vibrant avocado toast topped with juicy heirloom tomatoes, perfect for a healthy and satisfying breakfast or snack.

Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 1 cup heirloom cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: red pepper flakes, fresh basil, microgreens

Instructions

  1. Toast the slices of whole grain bread until golden and crisp.
  2. In a bowl, mash the avocado with lemon juice, salt, and pepper to taste.
  3. Spread the mashed avocado evenly over the toasted bread slices.
  4. Top with halved heirloom tomatoes.
  5. Drizzle olive oil over the tomatoes and add additional salt and pepper if desired.
  6. Garnish with optional red pepper flakes, fresh basil, or microgreens.
  7. Serve immediately and enjoy.

Notes

  • Use multigrain or sourdough bread for added flavor and nutrition.
  • Heirloom tomatoes can be substituted with regular cherry tomatoes.
