- 1 package phyllo dough (16 oz), thawed
- 2 cups mixed nuts (walnuts, pistachios, almonds), finely chopped
- 1 tsp ground cinnamon
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup water
- 1/2 cup honey
- 1 tsp vanilla extract
- 1 tsp lemon juice
- Preheat oven to 350°F (175°C).
- In a bowl, mix the chopped nuts with ground cinnamon.
- Unroll the phyllo dough and keep it covered with a damp towel to prevent drying out.
- Take one sheet of phyllo dough, brush with melted butter, and layer another sheet on top. Repeat until you have 3–4 layers.
- Sprinkle a line of nut mixture along the short edge of the dough.
- Roll the dough tightly over the nuts to form a log, then place seam-side down on a greased baking tray.
- Repeat with remaining phyllo and nuts.
- Brush all rolls with melted butter and bake for 30–35 minutes until golden brown and crisp.
- While baking, combine sugar, water, honey, vanilla extract, and lemon juice in a saucepan and bring to a boil. Simmer for 10 minutes, then let cool slightly.
- Remove rolls from the oven and immediately pour syrup evenly over them.
- Let the rolls soak for at least 1 hour before serving.
Notes
- You can use only one type of nut if preferred.
- Phyllo dough dries out quickly—work fast and keep unused sheets covered.
- For added flavor, add a pinch of ground cloves or cardamom to the nut mixture.
