Banana Peanut Butter Bites

Frozen chocolate-dipped banana sandwiches filled with creamy peanut butter—an easy, no-bake snack that satisfies sweet cravings and delivers a quick hit of energy.

  • 2 medium ripe bananas, peeled
  • 4 Tbsp (60 g) creamy peanut butter
  • 1 cup (170 g) semi-sweet chocolate chips
  • 1 tsp (5 g) coconut oil
  • Pinch of flaky sea salt (optional)

Instructions

  1. Slice the bananas into ¼-inch (6 mm) rounds; you should get about 24 slices.
  2. Spread roughly ½ tsp peanut butter onto 12 of the slices, then cap each with a second slice to form mini sandwiches.
  3. Place the sandwiches on a parchment-lined tray and freeze for 15 minutes to firm up.
  4. While they chill, melt the chocolate chips with the coconut oil in a microwave (30-second bursts, stirring) or over a double boiler until smooth.
  5. Dip each frozen banana sandwich halfway into the melted chocolate, letting excess drip off, and return to the tray.
  6. Sprinkle with sea salt if using, then freeze another 15 minutes, or until the chocolate is set.
  7. Serve straight from the freezer or let stand 2–3 minutes for a softer bite.

Notes

  • Swap in almond or cashew butter for a different flavor.
  • Use 70 % dark chocolate to reduce sugar.
  • Store bites in an airtight container in the freezer for up to 1 month.
