- 2 medium ripe bananas, peeled
- 4 Tbsp (60 g) creamy peanut butter
- 1 cup (170 g) semi-sweet chocolate chips
- 1 tsp (5 g) coconut oil
- Pinch of flaky sea salt (optional)
- Slice the bananas into ¼-inch (6 mm) rounds; you should get about 24 slices.
- Spread roughly ½ tsp peanut butter onto 12 of the slices, then cap each with a second slice to form mini sandwiches.
- Place the sandwiches on a parchment-lined tray and freeze for 15 minutes to firm up.
- While they chill, melt the chocolate chips with the coconut oil in a microwave (30-second bursts, stirring) or over a double boiler until smooth.
- Dip each frozen banana sandwich halfway into the melted chocolate, letting excess drip off, and return to the tray.
- Sprinkle with sea salt if using, then freeze another 15 minutes, or until the chocolate is set.
- Serve straight from the freezer or let stand 2–3 minutes for a softer bite.
