BBQ Chicken Sandwiches

Tender shredded BBQ chicken piled on soft sandwich buns, perfect for a quick and flavorful meal.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 1 medium onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 6 sandwich buns
  • Optional: coleslaw for topping

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and smoked paprika.
  2. In a skillet over medium heat, add olive oil and sauté onion until soft.
  3. Place chicken, sautéed onions, barbecue sauce, and chicken broth in a slow cooker.
  4. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  5. Shred the chicken using two forks and stir it back into the sauce.
  6. Serve on sandwich buns, adding coleslaw if desired.

  • Use your favorite BBQ sauce for a personalized flavor.
  • To save time, use pre-cooked rotisserie chicken and simmer with sauce for 15 minutes.
  • These sandwiches freeze well for up to 3 months.
