BBQ Chickpea Spicy Flatbread

A flavorful and spicy BBQ Chickpea Flatbread, perfect as a light lunch or dinner. It’s topped with smoky chickpeas, fresh veggies, and creamy drizzle on a crispy flatbread base.

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup BBQ sauce
  • 1 flatbread or naan
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell pepper, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup shredded vegan cheese (optional)
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • Salt and pepper, to taste
  • Fresh cilantro or parsley for garnish
  • Drizzle of vegan ranch or tahini sauce (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix chickpeas with BBQ sauce, smoked paprika, chili powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat, add chickpeas and sauté for 5–7 minutes until slightly crispy.
  4. Place flatbread on a baking sheet and layer with BBQ chickpeas, red onion, bell pepper, cherry tomatoes, and vegan cheese if using.
  5. Bake in the oven for 10–12 minutes until edges are crispy and toppings are cooked.
  6. Remove from oven, drizzle with vegan ranch or tahini sauce, and garnish with fresh herbs.
  7. Slice and serve warm.

Notes

  • Use store-bought or homemade flatbread.
  • Customize toppings with your favorite vegetables.
  • Add hot sauce for extra spice.
