Beef Stroganoff

Beef Stroganoff is a classic Russian dish featuring tender beef strips sautéed with onions and mushrooms in a creamy sour cream sauce, typically served over egg noodles or rice.

  • 1 lb beef sirloin or tenderloin, sliced into thin strips
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned. Remove from skillet and set aside.
  2. In the same skillet, melt butter and sauté the onions until soft. Add garlic and mushrooms, and cook until the mushrooms are browned.
  3. Sprinkle flour over the mushroom mixture and stir well to coat.
  4. Slowly add beef broth while stirring to avoid lumps. Stir in Worcestershire sauce and Dijon mustard. Bring to a simmer and cook until the sauce thickens slightly.
  5. Return the cooked beef to the skillet and stir to combine. Reduce heat to low and stir in sour cream. Heat through without boiling.
  6. Season with salt and pepper to taste. Serve over cooked egg noodles or rice and garnish with chopped parsley.

Notes

  • Use high-quality beef cuts like sirloin or tenderloin for best results.
  • Do not boil the sauce after adding sour cream to prevent curdling.
  • Can be made ahead and reheated gently over low heat.
