- 1 cup heavy whipping cream
- 8 oz mascarpone cheese
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup strong brewed coffee, cooled
- 20–24 Biscoff cookies (about 1 package)
- 1/4 cup Biscoff spread (optional, for topping)
- Cocoa powder or crushed Biscoff cookies (for garnish)
- In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
- In another bowl, combine mascarpone cheese, sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well incorporated.
- Dip each Biscoff cookie briefly into the cooled coffee and place a layer into the bottom of each serving cup.
- Spoon a layer of the mascarpone mixture over the cookies.
- Repeat the layers until the cup is filled, ending with a mascarpone layer.
- If using, warm Biscoff spread slightly and drizzle on top.
- Garnish with cocoa powder or crushed Biscoff cookies.
- Chill for at least 2 hours before serving.
Notes
- Do not over-soak the cookies in coffee to prevent sogginess.
- Use decaf coffee if you prefer a caffeine-free dessert.
- Chill longer for firmer layers and enhanced flavor.
