- 1 cup Bisquick mix
- 1 cup milk
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 pound breakfast sausage or bacon, cooked and crumbled
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- In a skillet, cook sausage or bacon until browned; drain excess grease and set aside.
- In a large bowl, whisk together the Bisquick mix, milk, and eggs until well combined.
- Stir in cheese, cooked meat, onion, bell pepper (if using), salt, and pepper.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes or until a knife inserted in the center comes out clean.
- Let it rest for 5-10 minutes before serving.
Notes
- You can substitute sausage with cooked ham or turkey bacon.
- Add chopped spinach or mushrooms for extra veggies.
- This casserole can be made a day ahead and refrigerated overnight before baking.
