Bisquick Breakfast Casserole

A hearty and easy-to-make breakfast casserole using Bisquick mix, eggs, cheese, and your choice of breakfast meats and vegetables. Perfect for feeding a crowd or meal-prepping ahead of time.

  • 1 cup Bisquick mix
  • 1 cup milk
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 pound breakfast sausage or bacon, cooked and crumbled
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. In a skillet, cook sausage or bacon until browned; drain excess grease and set aside.
  3. In a large bowl, whisk together the Bisquick mix, milk, and eggs until well combined.
  4. Stir in cheese, cooked meat, onion, bell pepper (if using), salt, and pepper.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes or until a knife inserted in the center comes out clean.
  7. Let it rest for 5-10 minutes before serving.

Notes

  • You can substitute sausage with cooked ham or turkey bacon.
  • Add chopped spinach or mushrooms for extra veggies.
  • This casserole can be made a day ahead and refrigerated overnight before baking.
