Blueberry Crumble Cheesecake Bars combine a buttery oat crumble with a creamy cheesecake filling and sweet blueberries for a delightful layered dessert.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 3/4 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar (for blueberry layer)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
  3. Press two-thirds of the mixture into the bottom of the prepared pan. Set aside the rest for topping.
  4. In a medium bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla extract, and mix until combined.
  5. Spread the cheesecake layer evenly over the crust.
  6. In another bowl, combine blueberries, cornstarch, lemon juice, and 1/4 cup sugar. Toss to coat.
  7. Evenly spread the blueberry mixture over the cheesecake layer.
  8. Sprinkle the remaining crumble mixture on top.
  9. Bake for 40–45 minutes, or until the top is golden and the center is set.
  10. Cool completely, then refrigerate for at least 2 hours before cutting into bars.

Notes

  • You can use frozen blueberries, just don’t thaw them before use.
  • For cleaner cuts, chill the bars overnight.
  • Add a pinch of cinnamon to the crumble for extra flavor.
