Blueberry Honey Crumble Ice Cream

A refreshing and creamy homemade ice cream featuring sweet blueberries and a crunchy honey crumble topping.

  • 2 cups fresh blueberries
  • 1/2 cup honey
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 cup granola or oat crumble

Instructions

  1. In a medium saucepan, combine blueberries and honey. Cook over medium heat, stirring occasionally, until the blueberries release their juice and the mixture thickens, about 5-7 minutes. Remove from heat and allow to cool.
  2. In a mixing bowl, whisk together heavy cream, milk, sugar, vanilla extract, and lemon juice until the sugar is dissolved.
  3. Puree the blueberry-honey mixture using a blender or food processor until smooth, then stir it into the cream mixture.
  4. Chill the mixture in the refrigerator for at least 2 hours or until well chilled.
  5. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  6. Transfer the ice cream to a container, layering it with granola or oat crumble for texture. Freeze for at least 4 hours or until firm.

Notes

  • Make sure the mixture is chilled thoroughly before churning for the best texture.
  • If you don’t have an ice cream maker, you can freeze the mixture and stir every 30 minutes until it firms up.
  • Feel free to add more honey to the ice cream base if you like a sweeter flavor.
