- 4 ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar (optional)
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- 1 baguette or crusty Italian bread
- 1 whole garlic clove (for rubbing on toast)
- Preheat the oven to 400°F (200°C).
- Dice the tomatoes and place them in a bowl. Add chopped basil, minced garlic, olive oil, balsamic vinegar (if using), salt, and pepper. Mix well and let sit for 10 minutes.
- Slice the baguette into 1/2-inch thick slices and place on a baking sheet.
- Toast the bread in the oven for 5–7 minutes or until golden and crisp.
- Remove the toasted bread and rub each slice with a whole garlic clove while still warm.
- Spoon the tomato mixture onto each slice just before serving.
- Drizzle with a little extra olive oil if desired and serve immediately.
Notes
- Use ripe, in-season tomatoes for the best flavor.
- You can grill the bread instead of baking for added smokiness.
- Make the tomato mixture ahead of time to let the flavors meld.
