Buffalo Cauliflower Bites

Buffalo Cauliflower Bites are a delicious, spicy, and healthier alternative to traditional buffalo wings. They are perfect as a snack, appetizer, or game day treat, with a crispy coating and tangy buffalo sauce.

  • 1 medium head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buffalo hot sauce
  • 2 tablespoons unsalted butter, melted (or vegan butter)
  • Cooking spray or oil for baking

Instructions

  1. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. In a large bowl, whisk together flour, water, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
  3. Add cauliflower florets to the batter and toss to coat evenly.
  4. Place battered cauliflower on the prepared baking sheet in a single layer. Bake for 20 minutes, flipping halfway through.
  5. While cauliflower bakes, mix the buffalo hot sauce with melted butter in a small bowl.
  6. Remove cauliflower from the oven and toss gently in the buffalo sauce mixture.
  7. Return cauliflower to the baking sheet and bake for an additional 10–15 minutes until crispy and browned.
  8. Remove from oven and let cool slightly before serving.

Notes

  • For extra crispiness, broil the cauliflower for 2–3 minutes after the second bake.
  • Serve with ranch or blue cheese dressing and celery sticks for a classic buffalo wing experience.
  • Use gluten-free flour for a gluten-free version.
