Butterscotch-Cornflake Apple Crisp

A sweet and crunchy twist on the classic apple crisp, this Butterscotch-Cornflake Apple Crisp combines tender baked apples with a buttery butterscotch sauce and a crispy cornflake topping.

  • 6 cups apples, peeled, cored, and sliced
  • 1/2 cup butterscotch chips
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 cups cornflakes, lightly crushed
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, and nutmeg. Spread evenly in the baking dish.
  3. Sprinkle butterscotch chips over the apples.
  4. In another bowl, combine crushed cornflakes, flour, salt, and melted butter. Mix until crumbly.
  5. Spread the cornflake mixture evenly over the apples and butterscotch chips.
  6. Bake for 35–40 minutes, or until the topping is golden brown and the apples are tender.
  7. Allow to cool slightly before serving. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • Granny Smith apples work best for a tart balance to the sweet topping.
  • You can substitute butterscotch chips with caramel chips or chocolate chips for variation.
  • For extra crunch, add chopped pecans or walnuts to the topping mixture.
