Cajun Chicken Pasta

A creamy, spicy Cajun chicken pasta made with seasoned chicken breast, colorful bell peppers, and a rich parmesan cream sauce tossed with fettuccine or penne.

  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • 2 tbsp unsalted butter
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with Cajun seasoning on both sides.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–6 minutes per side, until golden and cooked through. Remove and slice into strips.
  4. In the same skillet, add butter, bell peppers, and garlic. Sauté for 3–4 minutes until softened.
  5. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Stir in Parmesan cheese until the sauce is creamy and smooth. Season with salt and black pepper to taste.
  7. Add the cooked pasta and sliced chicken to the skillet, tossing to coat evenly in the sauce.
  8. Garnish with fresh parsley and serve warm.

Notes

  • For extra heat, add crushed red pepper flakes or more Cajun seasoning.
  • Use half-and-half instead of heavy cream for a lighter version.
  • Grilled or blackened chicken can be used for added smoky flavor.
  • Pairs well with garlic bread and a side salad.
