  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and finely chopped
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 2 tbsp unsalted butter, softened
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into prepared baking dish and bake for 8-10 minutes. Let cool.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla extract; beat until combined. Pour over crust.
  4. In a small bowl, toss chopped apples with cinnamon, nutmeg, and 2 tbsp brown sugar. Sprinkle evenly over cheesecake layer.
  5. In another bowl, combine flour, oats, 1/4 cup brown sugar, cinnamon, and softened butter to form a crumble. Sprinkle on top of apples.
  6. Bake for 30-35 minutes or until center is set. Cool completely, then refrigerate for at least 3 hours.
  7. Drizzle with caramel sauce before serving. Cut into bars and enjoy.
