Caramel Corn

Caramel corn is a sweet and crunchy snack made by coating freshly popped popcorn in a rich, buttery caramel sauce and baking it until crisp.

  • 10 cups popped popcorn
  • 1 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Place the popped popcorn in a large mixing bowl and set aside.
  3. In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Bring to a boil, stirring constantly.
  4. Once it begins to boil, stop stirring and let it boil for 4-5 minutes without stirring.
  5. Remove from heat and carefully stir in baking soda and vanilla extract. The mixture will bubble up.
  6. Immediately pour the hot caramel over the popcorn and stir to coat evenly.
  7. Spread the coated popcorn onto the prepared baking sheet in an even layer.
  8. Bake for 45-60 minutes, stirring every 15 minutes.
  9. Remove from oven and let it cool completely. Break into pieces and store in an airtight container.
