Cheese & Herb Focaccia

A soft, fluffy Italian bread topped with a blend of cheeses and aromatic herbs, perfect as a side or appetizer.

  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon instant yeast
  • 1 1/2 teaspoons salt
  • 1 1/2 cups warm water (about 110°F)
  • 1/4 cup olive oil, plus more for drizzling
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon garlic powder (optional)
  • Coarse sea salt, for topping

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt.
  2. Add warm water and 1/4 cup olive oil, stirring until a sticky dough forms.
  3. Knead the dough on a floured surface for about 5–7 minutes until smooth.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  5. Preheat oven to 425°F (220°C). Grease a baking sheet or line it with parchment paper.
  6. Press dough into the pan, spreading it out with your fingers.
  7. Use your fingers to dimple the surface of the dough.
  8. Drizzle with olive oil and sprinkle with mozzarella, Parmesan, herbs, garlic powder (if using), and sea salt.
  9. Bake for 20–25 minutes, or until golden brown and the cheese is bubbling.
  10. Let cool slightly before slicing and serving.

Notes

  • Use fresh herbs for the best flavor.
  • Try adding caramelized onions or olives for variation.
  • Best enjoyed warm but can be reheated in the oven.
