Cherry Almond Quick Bread

A deliciously moist and tender quick bread bursting with juicy cherries and crunchy almonds, perfect for breakfast or tea time.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1½ cups fresh cherries, pitted and chopped
  • ½ cup sliced almonds

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk buttermilk, melted butter, eggs, and almond extract until combined.
  4. Add wet ingredients to dry ingredients and stir gently until just combined. Fold in cherries and half of the sliced almonds.
  5. Pour batter into prepared pan. Sprinkle remaining almonds on top.
  6. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use frozen cherries if fresh cherries aren’t available; thaw and drain before using.
  • For extra almond flavor, drizzle bread with almond glaze after cooling.
  • Store leftover bread wrapped in plastic wrap or in an airtight container at room temperature for up to 3 days.
