Cherry Almond Streusel Coffee Cake

A moist and flavorful coffee cake topped with cherries and a crunchy almond streusel. Perfect for brunch or dessert.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup sour cream
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1½ cups fresh or frozen cherries, pitted and halved
  • Streusel topping:
  • ½ cup sliced almonds
  • ½ cup packed brown sugar
  • ½ cup all-purpose flour
  • ¼ cup unsalted butter, cold and cubed
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan or baking dish.
  2. In a large bowl, combine flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together sour cream, softened butter, eggs, vanilla, and almond extract.
  4. Add wet ingredients to dry ingredients, mixing until just combined. Gently fold in cherries.
  5. Pour batter into prepared pan, spreading evenly.
  6. Prepare the streusel topping: in a bowl, mix almonds, brown sugar, flour, cinnamon, and butter until crumbly.
  7. Sprinkle streusel evenly over cake batter.
  8. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool slightly before removing from the pan. Serve warm or at room temperature.

Notes

  • You can substitute cherries with blueberries or raspberries if preferred.
  • This cake stores well in an airtight container at room temperature for up to 3 days.
  • For added sweetness, drizzle with a powdered sugar glaze before serving.
