- 2 cups fresh sweet cherries, pitted
- 3 large eggs
- 1/2 cup granulated sugar
- 1 cup whole milk
- 1/2 cup all-purpose flour
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- Powdered sugar for garnish
- Butter, for greasing the baking dish
- Preheat oven to 350°F (175°C). Butter a 9-inch baking dish or cast-iron skillet.
- Arrange the cherries evenly in the bottom of the prepared baking dish.
- In a mixing bowl, whisk eggs, sugar, milk, flour, vanilla extract, and salt until smooth and well combined.
- Pour the batter over the cherries evenly.
- Bake in the preheated oven for 35-40 minutes, until puffed and golden around edges and a toothpick inserted into the center comes out clean.
- Allow to cool slightly. Dust with powdered sugar before serving warm or at room temperature.
Notes
- Traditionally, cherries are left unpitted to retain more flavor, but removing pits makes eating easier.
- Can be served warm or cold, and goes well with whipped cream or vanilla ice cream.
- Any sweet seasonal fruit, such as blueberries or peaches, can substitute cherries.
