Cherry Clafoutis Recipe

Cherry Clafoutis is a classic French dessert featuring juicy cherries baked in a tender, custard-like batter. Perfect for a simple yet elegant dessert.

  • 2 cups fresh sweet cherries, pitted
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • Powdered sugar for garnish
  • Butter, for greasing the baking dish

Instructions

  1. Preheat oven to 350°F (175°C). Butter a 9-inch baking dish or cast-iron skillet.
  2. Arrange the cherries evenly in the bottom of the prepared baking dish.
  3. In a mixing bowl, whisk eggs, sugar, milk, flour, vanilla extract, and salt until smooth and well combined.
  4. Pour the batter over the cherries evenly.
  5. Bake in the preheated oven for 35-40 minutes, until puffed and golden around edges and a toothpick inserted into the center comes out clean.
  6. Allow to cool slightly. Dust with powdered sugar before serving warm or at room temperature.

Notes

  • Traditionally, cherries are left unpitted to retain more flavor, but removing pits makes eating easier.
  • Can be served warm or cold, and goes well with whipped cream or vanilla ice cream.
  • Any sweet seasonal fruit, such as blueberries or peaches, can substitute cherries.
