Cherry Pie Bars with Crisp Topping

Delicious cherry pie bars topped with a buttery, crisp crumb topping, perfect for dessert or snacks.

  • 3 cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, chilled and cut into cubes
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 (21-ounce) can cherry pie filling
  • ½ cup rolled oats
  • ¼ teaspoon almond extract (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold butter cubes to the flour mixture and blend with a pastry cutter or fingers until crumbly.
  4. In a small bowl, beat the egg and vanilla extract. Add this mixture to the crumbly flour mixture, combining lightly to form a dough.
  5. Press two-thirds of the dough evenly into the bottom of the prepared pan.
  6. Spread cherry pie filling evenly over the dough layer.
  7. Mix rolled oats and almond extract (if using) into the remaining dough to create a crumb topping.
  8. Sprinkle the crumb topping evenly over the cherry filling.
  9. Bake for 40-45 minutes, until golden brown.
  10. Remove from oven and allow to cool completely before cutting into bars.

Notes

  • You can substitute fresh cherries if desired; toss them in a bit of sugar and cornstarch.
  • Store bars in an airtight container at room temperature for up to 3 days.
  • Add chopped nuts to the topping for extra crunch.
