- 3 cups all-purpose flour
- 1½ cups granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter, chilled and cut into cubes
- 1 large egg
- ½ teaspoon vanilla extract
- 1 (21-ounce) can cherry pie filling
- ½ cup rolled oats
- ¼ teaspoon almond extract (optional)
- Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add cold butter cubes to the flour mixture and blend with a pastry cutter or fingers until crumbly.
- In a small bowl, beat the egg and vanilla extract. Add this mixture to the crumbly flour mixture, combining lightly to form a dough.
- Press two-thirds of the dough evenly into the bottom of the prepared pan.
- Spread cherry pie filling evenly over the dough layer.
- Mix rolled oats and almond extract (if using) into the remaining dough to create a crumb topping.
- Sprinkle the crumb topping evenly over the cherry filling.
- Bake for 40-45 minutes, until golden brown.
- Remove from oven and allow to cool completely before cutting into bars.
Notes
- You can substitute fresh cherries if desired; toss them in a bit of sugar and cornstarch.
- Store bars in an airtight container at room temperature for up to 3 days.
- Add chopped nuts to the topping for extra crunch.
