Chicken and Avocado Tacos

Delicious and healthy chicken and avocado tacos made with seasoned grilled chicken, creamy avocado, and fresh toppings, wrapped in warm tortillas.

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta or cotija cheese (optional)
  • 1/2 cup shredded lettuce or cabbage (optional)

Instructions

  1. In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts.
  2. Grill or cook the chicken in a skillet over medium heat for about 6-8 minutes per side, or until cooked through. Let rest, then slice thinly.
  3. Warm the tortillas in a skillet or microwave.
  4. Slice the avocados and drizzle with lime juice to prevent browning.
  5. Assemble the tacos by adding sliced chicken and avocado to each tortilla.
  6. Top with cilantro, red onion, cheese, and lettuce or cabbage if using.
  7. Serve immediately with extra lime wedges if desired.

Notes

  • You can use rotisserie chicken for a quicker version.
  • Add salsa or hot sauce for an extra kick.
  • Use whole wheat tortillas for a healthier option.
