- 2 chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 ripe avocados, sliced
- 1 tablespoon lime juice
- 8 small corn or flour tortillas
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/4 cup crumbled feta or cotija cheese (optional)
- 1/2 cup shredded lettuce or cabbage (optional)
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts.
- Grill or cook the chicken in a skillet over medium heat for about 6-8 minutes per side, or until cooked through. Let rest, then slice thinly.
- Warm the tortillas in a skillet or microwave.
- Slice the avocados and drizzle with lime juice to prevent browning.
- Assemble the tacos by adding sliced chicken and avocado to each tortilla.
- Top with cilantro, red onion, cheese, and lettuce or cabbage if using.
- Serve immediately with extra lime wedges if desired.
Notes
- You can use rotisserie chicken for a quicker version.
- Add salsa or hot sauce for an extra kick.
