Chicken and Dumplings

- 1 whole chicken (about 3–4 pounds), cut into pieces
- 8 cups water or chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt (for dumplings)
- 3/4 cup milk
- 4 tbsp butter, melted
- In a large pot, combine chicken, water or broth, onion, carrots, celery, garlic, bay leaves, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 45-60 minutes until chicken is tender.
- Remove chicken from the pot, discard skin and bones, and shred the meat. Return meat to the pot.
- In a mixing bowl, whisk together flour, baking powder, and salt for dumplings.
- Add milk and melted butter to the dry ingredients and stir until just combined to form a soft dough.
- Drop spoonfuls of dumpling dough into the simmering soup. Cover and cook for 15-20 minutes until dumplings are puffed and cooked through.
- Remove bay leaves, adjust seasoning to taste, and serve hot.
Notes
- You can use rotisserie chicken to save time.
- For a creamier version, add 1/2 cup of heavy cream after dumplings are cooked.
- Do not lift the lid while the dumplings are cooking to ensure they stay light and fluffy.
