Chicken and Dumplings

A hearty and comforting Southern-style dish featuring tender chicken and fluffy dumplings simmered in a rich, savory broth.

  • 1 whole chicken (about 34 pounds), cut into pieces
  • 8 cups water or chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt (for dumplings)
  • 3/4 cup milk
  • 4 tbsp butter, melted

Instructions

  1. In a large pot, combine chicken, water or broth, onion, carrots, celery, garlic, bay leaves, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 45-60 minutes until chicken is tender.
  2. Remove chicken from the pot, discard skin and bones, and shred the meat. Return meat to the pot.
  3. In a mixing bowl, whisk together flour, baking powder, and salt for dumplings.
  4. Add milk and melted butter to the dry ingredients and stir until just combined to form a soft dough.
  5. Drop spoonfuls of dumpling dough into the simmering soup. Cover and cook for 15-20 minutes until dumplings are puffed and cooked through.
  6. Remove bay leaves, adjust seasoning to taste, and serve hot.

Notes

  • You can use rotisserie chicken to save time.
  • For a creamier version, add 1/2 cup of heavy cream after dumplings are cooked.
  • Do not lift the lid while the dumplings are cooking to ensure they stay light and fluffy.
