Churro Ice Cream Sandwiches

Churro Ice Cream Sandwiches are a fun and indulgent dessert made with crispy cinnamon-sugar churro rounds filled with creamy ice cream for a sweet handheld treat.

Ingredients

  • 1 cup water
  • 2 1/2 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 cup all-purpose flour
  • Vegetable oil, for frying
  • 1/2 cup sugar (for coating)
  • 1 tsp ground cinnamon
  • 1 quart ice cream (any flavor, softened slightly)

Instructions

  1. In a saucepan, combine water, 2 1/2 tbsp sugar, salt, and 2 tbsp vegetable oil. Bring to a boil, then remove from heat.
  2. Stir in flour until the mixture forms a dough ball.
  3. Transfer dough into a piping bag fitted with a large star tip.
  4. Heat oil in a deep pan to 350°F (175°C).
  5. Pipe 3-inch round spirals of dough onto parchment paper squares.
  6. Carefully flip the dough rounds into the hot oil and fry until golden brown on both sides, about 2–3 minutes per side.
  7. Drain on paper towels, then immediately toss in cinnamon-sugar mixture.
  8. Allow churro rounds to cool completely.
  9. Place a scoop of softened ice cream between two churro rounds, press gently to form a sandwich.
  10. Serve immediately, or wrap in parchment and freeze for 30 minutes for a firmer texture.

Notes

  • Best served fresh, but can be frozen for up to 1 week.
  • You can use different ice cream flavors for variety.
  • For extra crunch, roll churros twice in cinnamon sugar.
