Classic Green Bean Almondine is a simple yet elegant French-inspired side dish featuring tender green beans sautéed with toasted almonds and a hint of lemon.

  • 1 lb fresh green beans, trimmed
  • 2 tablespoons unsalted butter
  • 1/4 cup sliced almonds
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and blanch the green beans for 3-4 minutes until just tender but still crisp.
  2. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat.
  4. Add the sliced almonds and toast, stirring frequently, until golden brown, about 2-3 minutes.
  5. Add the minced garlic and cook for another 30 seconds until fragrant.
  6. Add the green beans to the skillet and toss to coat with the almonds and butter.
  7. Cook for 2-3 minutes, stirring occasionally, until the green beans are heated through.
  8. Drizzle with lemon juice and season with salt and black pepper to taste.
  9. Serve immediately.

Notes

  • Make sure not to overcook the green beans to retain their crunch and vibrant color.
  • You can substitute butter with olive oil for a dairy-free version.
  • Try adding a pinch of red pepper flakes for a bit of heat.
