Coconut Mango Paradise Ice Cream

A tropical, creamy ice cream made with coconut milk and fresh mango for a refreshing and indulgent treat.

  • 2 cups coconut milk
  • 1 cup fresh mango puree
  • 1/2 cup sweetened condensed milk
  • 1/2 cup coconut flakes
  • 1/4 cup sugar (optional, depending on mango sweetness)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a medium bowl, combine coconut milk, mango puree, and sweetened condensed milk. Mix well until smooth.
  2. Add sugar if you prefer a sweeter taste and stir until dissolved.
  3. Stir in vanilla extract and salt for extra flavor.
  4. Pour the mixture into an ice cream maker and follow the manufacturer’s instructions to churn until it thickens.
  5. During the last few minutes of churning, add in coconut flakes for texture.
  6. Transfer the ice cream to a container and freeze for at least 4 hours or until firm.
  7. Serve and enjoy the tropical paradise in every bite!

Notes

  • Ensure your mango is ripe for the best flavor.
  • If you don’t have an ice cream maker, pour the mixture into a shallow pan and freeze, stirring every 30 minutes until it’s fully frozen.
  • For added richness, you can use full-fat coconut milk.
