Cold Avocado Pasta with Lemon & Herbs

A refreshing and creamy cold avocado pasta tossed with lemon juice and fresh herbs. Perfect for a light summer meal or side dish.

Ingredients

  • 8 oz pasta (such as spaghetti or linguine)
  • 2 ripe avocados, peeled and pitted
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes, cherry tomatoes, or grated Parmesan

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a blender or food processor, combine avocados, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth and creamy.
  3. In a large bowl, toss the cold pasta with the avocado sauce until well coated.
  4. Add chopped basil and parsley, and mix gently to combine.
  5. Adjust seasoning to taste. Optionally, add red pepper flakes, cherry tomatoes, or Parmesan.
  6. Chill for 15–30 minutes before serving for best flavor.

Notes

  • Use gluten-free pasta for a gluten-free version.
  • Best served the same day as avocados can brown over time.
  • Add grilled chicken or shrimp for a protein boost.
