Cold Avocado Pasta with Lemon & Herbs

- 8 oz pasta (such as spaghetti or linguine)
- 2 ripe avocados, peeled and pitted
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Optional: red pepper flakes, cherry tomatoes, or grated Parmesan
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a blender or food processor, combine avocados, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth and creamy.
- In a large bowl, toss the cold pasta with the avocado sauce until well coated.
- Add chopped basil and parsley, and mix gently to combine.
- Adjust seasoning to taste. Optionally, add red pepper flakes, cherry tomatoes, or Parmesan.
- Chill for 15–30 minutes before serving for best flavor.

- Best served the same day as avocados can brown over time.
