- 1 cup orzo pasta
- 1 cup diced cucumber
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine the cooled orzo, cucumber, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
