Cold Orzo Salad with Cucumbers & Feta

A refreshing and tangy cold orzo salad made with crisp cucumbers, creamy feta cheese, and a zesty lemon dressing. Perfect for summer picnics or as a light side dish.

Ingredients

  • 1 cup orzo pasta
  • 1 cup diced cucumber
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooled orzo, cucumber, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance and stored in the refrigerator.
  • Feel free to add cherry tomatoes or olives for extra flavor.
  • Use fresh lemon juice for the best taste.
