Cranberry Oatmeal Bars

These cranberry oatmeal bars are chewy, slightly tart, and perfectly sweetened, making them a wholesome snack or dessert option. They combine hearty oats, tangy cranberries, and a buttery base for a delicious treat.

  • 1 cup (120g) all-purpose flour
  • 1 cup (90g) rolled oats
  • 3/4 cup (150g) packed brown sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (120g) dried cranberries
  • 1/2 cup (120g) cranberry preserves or jam
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) baking pan or line it with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt.
  3. Add melted butter and vanilla extract to the dry mixture, stirring until well combined.
  4. Press about two-thirds of the oat mixture into the bottom of the prepared pan to form the crust.
  5. Spread cranberry preserves evenly over the crust, then sprinkle dried cranberries on top.
  6. Sprinkle the remaining oat mixture over the cranberry layer, pressing gently to set.
  7. Bake for 25–30 minutes, or until the top is golden brown.
  8. Allow to cool completely before cutting into bars.

Notes

  • For a less sweet option, use unsweetened cranberry preserves.
  • Substitute half of the dried cranberries with chopped nuts for added crunch.
  • Store bars in an airtight container for up to 5 days.
