- 1 cup (200g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1–2 tablespoons milk (as needed)
- 1/2 cup coarse sparkling sugar or sanding sugar (for topping)
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until combined. Add milk if the dough seems too dry.
- Roll out the dough on a lightly floured surface to about 1/8 inch thickness.
- Sprinkle the top generously with coarse sugar, pressing lightly into the dough.
- Cut the dough into irregular shard-like shapes with a knife or pizza cutter.
- Place the shards on the prepared baking sheet and bake for 8–10 minutes, or until edges are lightly golden.
- Cool completely on a wire rack before serving.
