Cucumber Mint Cooler

- 1 medium cucumber, peeled and sliced
- 1/4 cup fresh mint leaves
- 2 tablespoons lime juice (about 1 lime)
- 1–2 tablespoons honey or agave syrup (to taste)
- 2 cups cold water or sparkling water
- Ice cubes
- Mint sprigs and cucumber slices, for garnish (optional)
- In a blender, combine the sliced cucumber, mint leaves, lime juice, and honey or agave syrup.
- Add 1 cup of cold water and blend until smooth.
- Strain the mixture through a fine mesh sieve or cheesecloth into a pitcher to remove pulp.
- Stir in the remaining 1 cup of cold water or sparkling water.
- Serve over ice in glasses and garnish with mint sprigs and cucumber slices if desired.
Notes
- Adjust sweetness by adding more or less honey/agave syrup.
- For an extra cooling effect, chill the cucumber and water before blending.
- Can be made ahead and stored in the refrigerator for up to 1 day.
