Dump & Go Crockpot Marry Me Chicken

A creamy, dump-and-go slow cooker version of the viral Marry Me Chicken—featuring tender shredded chicken in a rich sun-dried tomato and Parmesan sauce.

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp Italian seasoning
  • ½ tsp pepper
  • ½ tsp salt
  • 6 cloves garlic, pressed
  • 8 oz sun‑dried tomatoes in oil, julienned
  • 1 onion, chopped
  • 8 oz cream cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Place chicken in crockpot; season with salt, pepper, and Italian seasoning. Add garlic.
  2. Pour sun‑dried tomatoes (with oil) and chopped onion over chicken.
  3. Cover and cook on high 2½–3 hrs (or low 3½–4 hrs) until chicken reaches 165 °F.
  4. Shred chicken in the crockpot, mix with juices.
  5. Top with cream cheese; recover and let soften ~5–10 min, then stir until smooth.
  6. Stir in Parmesan, sprinkle basil, then serve.

Notes

  • Can swap chicken thighs for richer flavor.
  • Let cream cheese soften on top before stirring to avoid lumps.
  • Use fresh basil for best flavor; thyme or oregano also work.
  • Prep ahead by dumping ingredients (except cream cheese) into crockpot and refrigerating overnight.
  • Freezer-friendly: freeze prepped ingredients (minus cream cheese) for up to 3 months.
