Energy Balls with Oats & Peanut Butter

These no-bake energy balls made with oats and peanut butter are a quick, nutritious, and delicious snack perfect for on-the-go energy or a post-workout bite.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter (natural, unsweetened)
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the oats, flaxseed, chocolate chips, and salt.
  2. Add peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
  3. Stir until the mixture is well combined and sticky.
  4. Place the bowl in the refrigerator for 15–30 minutes to firm up the mixture.
  5. Once chilled, roll the mixture into small balls (about 1 inch in diameter).
  6. Store in an airtight container in the refrigerator for up to 1 week.

Notes

  • You can substitute almond butter or sunflower seed butter for peanut butter.
  • Feel free to add dried fruits, chia seeds, or protein powder for extra nutrition.
  • If the mixture is too dry, add a bit more honey or nut butter; if too wet, add more oats.
