Fairy Tale Mini Cheesecakes are charming, bite-sized cheesecakes with a creamy filling and a buttery crust, perfect for parties, tea time, or whimsical gatherings.

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • Optional toppings: fresh berries, edible glitter, whipped cream

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with paper cupcake liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon of the mixture firmly into the bottom of each liner to form a crust.
  3. In a large mixing bowl, beat cream cheese until smooth. Add sugar and continue beating until creamy.
  4. Mix in eggs one at a time, then add vanilla extract, sour cream, and heavy cream. Beat until smooth and well combined.
  5. Divide the batter evenly among the liners, filling each about 3/4 full.
  6. Bake for 18–22 minutes, or until the centers are just set. Do not overbake.
  7. Cool completely in the pan, then refrigerate for at least 2 hours before serving.
  8. Top with fresh berries, whipped cream, or edible glitter for a fairy tale touch.

Notes

  • Use room temperature cream cheese for a smoother filling.
  • Decorate with colorful toppings to fit a fairy tale theme.
  • Best served chilled.
