Fig Almond Cake

A moist and flavorful cake made with ground almonds and sweet figs, perfect for tea time or as a light dessert.

  • 1 cup dried figs, chopped
  • 1/2 cup hot water
  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a cake pan.
  2. Soak chopped figs in hot water for 10 minutes, then drain.
  3. In a bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, mix almond flour, all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk.
  7. Fold in soaked figs gently.
  8. Pour batter into prepared pan and bake for 30–35 minutes or until a toothpick inserted comes out clean.
  9. Cool before slicing and serving.

Notes

  • Use fresh figs instead of dried when in season.
  • Add a pinch of cinnamon or cardamom for extra flavor.
  • Pairs well with a dollop of whipped cream or Greek yogurt.
