- 4 cups fresh cherries, pitted and halved
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- ¾ cup old-fashioned oats
- ½ cup all-purpose flour
- ½ cup brown sugar, packed
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, chilled and cubed
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, combine cherries, granulated sugar, cornstarch, lemon juice, and vanilla. Mix gently and transfer to the prepared baking dish.
- In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt.
- Add chilled butter cubes to oat mixture and cut in using a pastry blender or fingers until crumbly.
- Sprinkle topping evenly over the cherries.
- Bake for 35-40 minutes until the topping is golden brown and cherries are bubbling.
- Allow crisp to cool slightly before serving warm, optionally with ice cream or whipped cream.
Notes
- Use fresh cherries for best results, but frozen cherries can be substituted after thawing and draining excess liquid.
- You can use almond extract instead of vanilla for a different flavor profile.
- For gluten-free diets, substitute gluten-free flour blend and certified gluten-free oats.
