- 1 cup blueberry ice cream (softened)
- 1 cup raspberry ice cream (softened)
- 1 cup blackcurrant ice cream (softened)
- 1–2 drops each of gel food coloring (blue, purple, pink, black)
- 1 tbsp edible glitter or star sprinkles
- 1 cup dark chocolate (melted)
- 2 tbsp coconut oil
- Ice cream bar molds
- Popsicle sticks
- Soften all ice cream flavors until spreadable but not melted.
- Divide into separate bowls and mix each with a few drops of gel food coloring to intensify galaxy-like colors.
- Layer the ice cream into bar molds, swirling the colors together with a skewer or toothpick to create a galaxy effect.
- Insert popsicle sticks and freeze for at least 4 hours or until firm.
- In a bowl, melt dark chocolate and stir in coconut oil until smooth.
- Remove bars from molds, dip each into the chocolate coating, and quickly sprinkle with edible glitter or star sprinkles.
- Place bars on a parchment-lined tray and return to freezer for 30 minutes before serving.
