Galaxy Ice Cream Bars

Galaxy Ice Cream Bars are a fun and visually stunning frozen treat made with layers of colorful ice cream or yogurt, shaped into bars, and decorated with galaxy-inspired swirls and edible glitter. Perfect for parties, summer desserts, or themed celebrations.

  • 2 cups vanilla ice cream (softened)
  • 1 cup blueberry ice cream (softened)
  • 1 cup raspberry ice cream (softened)
  • 1 cup blackcurrant ice cream (softened)
  • 12 drops each of gel food coloring (blue, purple, pink, black)
  • 1 tbsp edible glitter or star sprinkles
  • 1 cup dark chocolate (melted)
  • 2 tbsp coconut oil
  • Ice cream bar molds
  • Popsicle sticks

Instructions

  1. Soften all ice cream flavors until spreadable but not melted.
  2. Divide into separate bowls and mix each with a few drops of gel food coloring to intensify galaxy-like colors.
  3. Layer the ice cream into bar molds, swirling the colors together with a skewer or toothpick to create a galaxy effect.
  4. Insert popsicle sticks and freeze for at least 4 hours or until firm.
  5. In a bowl, melt dark chocolate and stir in coconut oil until smooth.
  6. Remove bars from molds, dip each into the chocolate coating, and quickly sprinkle with edible glitter or star sprinkles.
  7. Place bars on a parchment-lined tray and return to freezer for 30 minutes before serving.

Notes

  • You can use frozen yogurt instead of ice cream for a lighter version.
  • Adjust colors depending on your preferred galaxy look.
  • Work quickly when dipping in chocolate to prevent melting.
  • Store bars in an airtight container in the freezer for up to 2 weeks.
