Ground Beef Quesadillas

- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 8 medium flour tortillas
- 2 cups shredded cheddar cheese (or Mexican blend)
- 2 tbsp butter, softened
- Optional toppings: sour cream, salsa, guacamole
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 3 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart with a spatula, about 5–7 minutes. Drain excess fat.
- Stir in chili powder, cumin, paprika, salt, and pepper. Mix well and remove from heat.
- Lay out tortillas and sprinkle half the cheese over one side of each tortilla.
- Spoon beef mixture evenly over cheese, then top with remaining cheese.
- Fold tortillas in half to enclose filling.
- Heat a large skillet or griddle over medium heat. Lightly butter the outside of each quesadilla.
- Cook quesadillas 2–3 minutes per side until golden and cheese is melted.
- Cut into wedges and serve with optional toppings.
Notes
- For extra flavor, add diced jalapeños or bell peppers to the beef mixture.
- You can substitute ground turkey or chicken for beef.
- Serve immediately for best texture.
