Ground Beef Quesadillas

Crispy, golden tortillas filled with seasoned ground beef, melted cheese, and savory spices, perfect for a quick and satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 8 medium flour tortillas
  • 2 cups shredded cheddar cheese (or Mexican blend)
  • 2 tbsp butter, softened
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 3 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add ground beef and cook until browned, breaking it apart with a spatula, about 5–7 minutes. Drain excess fat.
  4. Stir in chili powder, cumin, paprika, salt, and pepper. Mix well and remove from heat.
  5. Lay out tortillas and sprinkle half the cheese over one side of each tortilla.
  6. Spoon beef mixture evenly over cheese, then top with remaining cheese.
  7. Fold tortillas in half to enclose filling.
  8. Heat a large skillet or griddle over medium heat. Lightly butter the outside of each quesadilla.
  9. Cook quesadillas 2–3 minutes per side until golden and cheese is melted.
  10. Cut into wedges and serve with optional toppings.

Notes

  • For extra flavor, add diced jalapeños or bell peppers to the beef mixture.
  • You can substitute ground turkey or chicken for beef.
  • Serve immediately for best texture.
