High Protein Egg Bites

These High Protein Egg Bites are a quick, healthy, and portable breakfast or snack option, packed with protein and customizable with your favorite mix-ins.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped spinach
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced cooked turkey bacon or ham
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a blender, combine eggs and cottage cheese until smooth.
  3. Pour egg mixture into a bowl and stir in cheddar cheese, spinach, bell pepper, and turkey bacon or ham.
  4. Season with salt and pepper to taste.
  5. Pour mixture evenly into the muffin tin cups, filling about 3/4 full.
  6. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  7. Let cool slightly before removing from the tin. Serve warm or store for later.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
  • Can be frozen and reheated in the microwave.
  • Customize with your favorite vegetables or meats.
  • Use silicone muffin molds for easier removal.
