- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp honey
- 2 tbsp chipotle peppers in adobo sauce, minced
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red onion, sliced
- 1 cup corn kernels
- 1 1/2 cups cornbread mix
- 1/2 cup shredded cheddar cheese
- 1/2 cup milk
- 1 egg
- 1/4 cup sour cream (optional topping)
- 1 tbsp chopped cilantro (optional garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix honey, chipotle peppers, smoked paprika, garlic powder, salt, and pepper. Add chicken breasts and coat evenly. Let marinate for at least 15 minutes.
- Heat 1 tbsp olive oil in a skillet over medium heat. Sear chicken until cooked through, about 5-6 minutes per side. Let rest, then slice thinly.
- In the same skillet, add remaining olive oil and sauté bell peppers, onion, and corn until tender and slightly charred. Set aside.
- In a mixing bowl, combine cornbread mix, milk, egg, and cheddar cheese. Pour into a greased round baking dish and bake for 20-25 minutes until golden and set. Let cool slightly.
- Slice cornbread horizontally into two layers. On a serving plate, place the bottom layer of cornbread.
- Layer sautéed vegetables and sliced chicken over the bottom cornbread layer.
- Top with the second layer of cornbread, pressing down gently.
- Garnish with a dollop of sour cream and chopped cilantro if desired.
- Slice like a cake and serve warm.
