Honey Lavender Dream Ice Cream

A smooth and creamy ice cream with the delicate flavors of honey and lavender, perfect for a refreshing yet aromatic treat.

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup honey
  • 1 tablespoon dried lavender buds
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan, combine the milk, cream, and dried lavender buds. Heat over medium heat until hot, but not boiling, stirring occasionally.
  2. Remove from heat and let the lavender steep for about 10 minutes, then strain out the lavender buds.
  3. In a separate bowl, whisk together the egg yolks and honey until smooth.
  4. Slowly pour a little bit of the warm milk and cream mixture into the egg yolk mixture, whisking constantly to temper the yolks.
  5. Gradually add the rest of the milk mixture to the egg yolks, whisking to combine.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon (about 170°F or 77°C).
  7. Remove from heat and strain the custard through a fine mesh sieve to remove any cooked egg bits.
  8. Stir in the vanilla extract and a pinch of salt.
  9. Let the custard cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
  10. Once the custard is chilled, churn it in an ice cream maker according to the manufacturer’s instructions.
  11. Transfer the churned ice cream to a container and freeze for at least 4 hours before serving.

Notes

  • You can adjust the amount of lavender depending on how strong you want the flavor to be.
  • If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches a creamy consistency.
  • Make sure to let the custard cool completely before churning for the best texture.
