- 8 oz (225 g) pasta of choice
- 1 tbsp olive oil
- 2 cups mushrooms, sliced (e.g., cremini or button)
- 2 cloves garlic, minced
- 1 cup hummus
- 1/4 cup pasta cooking water (reserved)
- 1 tbsp lemon juice
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika (optional)
- Fresh parsley or basil for garnish (optional)
- Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add sliced mushrooms and sauté for 6-8 minutes until they are browned and tender.
- Add minced garlic and cook for another 1-2 minutes until fragrant.
- Reduce heat to low and stir in hummus, lemon juice, salt, pepper, and smoked paprika (if using).
- Add the reserved pasta water to thin the sauce to desired consistency.
- Toss the cooked pasta into the sauce and mix well until evenly coated.
- Serve warm, garnished with fresh herbs if desired.
Notes
- Use whole wheat or gluten-free pasta if preferred.
- For extra protein, add chickpeas or grilled tofu.
- Store leftovers in an airtight container for up to 3 days.
