Hummus Pasta with Mushrooms

A creamy and flavorful pasta dish made with hummus and sautéed mushrooms, offering a healthy, vegan twist on traditional creamy pastas.

  • 8 oz (225 g) pasta of choice
  • 1 tbsp olive oil
  • 2 cups mushrooms, sliced (e.g., cremini or button)
  • 2 cloves garlic, minced
  • 1 cup hummus
  • 1/4 cup pasta cooking water (reserved)
  • 1 tbsp lemon juice
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add sliced mushrooms and sauté for 6-8 minutes until they are browned and tender.
  4. Add minced garlic and cook for another 1-2 minutes until fragrant.
  5. Reduce heat to low and stir in hummus, lemon juice, salt, pepper, and smoked paprika (if using).
  6. Add the reserved pasta water to thin the sauce to desired consistency.
  7. Toss the cooked pasta into the sauce and mix well until evenly coated.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

  • Use whole wheat or gluten-free pasta if preferred.
  • For extra protein, add chickpeas or grilled tofu.
  • Store leftovers in an airtight container for up to 3 days.
