- 1 lb boneless, skinless chicken thighs or breasts, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 2 tbsp gochujang (Korean chili paste)
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp vegetable oil (for cooking)
- 1 head of butter or Bibb lettuce, leaves separated
- 1 cup cooked rice (optional)
- 1/2 cup shredded carrots
- 1/2 cup cucumber, julienned
- 2 green onions, sliced
- 1 tbsp sesame seeds (optional)
- In a bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, gochujang, garlic, and ginger to make the marinade.
- Add sliced chicken to the marinade, cover, and refrigerate for at least 30 minutes.
- Heat vegetable oil in a skillet or grill pan over medium-high heat.
- Add marinated chicken and cook for 5-7 minutes, or until fully cooked and slightly caramelized.
- Wash and dry the lettuce leaves.
- To assemble wraps, place a spoonful of rice (if using) on a lettuce leaf, top with chicken, shredded carrots, cucumber, and green onions.
- Sprinkle with sesame seeds if desired and serve immediately.
Notes
- You can substitute gochujang with sriracha for a milder spice level.
- Chicken can be grilled for extra smokiness.
- These wraps can be made low-carb by skipping the rice.
