Korean BBQ Chicken Lettuce Wraps

These Korean BBQ Chicken Lettuce Wraps are a flavorful, healthy meal featuring grilled or sautéed marinated chicken, fresh veggies, and a savory-sweet gochujang-based sauce, all wrapped in crisp lettuce leaves.

  • 1 lb boneless, skinless chicken thighs or breasts, thinly sliced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp gochujang (Korean chili paste)
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil (for cooking)
  • 1 head of butter or Bibb lettuce, leaves separated
  • 1 cup cooked rice (optional)
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, julienned
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, gochujang, garlic, and ginger to make the marinade.
  2. Add sliced chicken to the marinade, cover, and refrigerate for at least 30 minutes.
  3. Heat vegetable oil in a skillet or grill pan over medium-high heat.
  4. Add marinated chicken and cook for 5-7 minutes, or until fully cooked and slightly caramelized.
  5. Wash and dry the lettuce leaves.
  6. To assemble wraps, place a spoonful of rice (if using) on a lettuce leaf, top with chicken, shredded carrots, cucumber, and green onions.
  7. Sprinkle with sesame seeds if desired and serve immediately.

Notes

  • You can substitute gochujang with sriracha for a milder spice level.
  • Chicken can be grilled for extra smokiness.
  • These wraps can be made low-carb by skipping the rice.
