Korean BBQ Chicken Skewers

Flavorful and juicy Korean BBQ Chicken Skewers marinated in a sweet, savory, and slightly spicy sauce, then grilled to perfection. Perfect for summer cookouts or weeknight dinners.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil (for grilling)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)
  • Wooden or metal skewers

Instructions

  1. In a large bowl, mix soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, gochujang, and honey to make the marinade.
  2. Add the chicken pieces to the marinade, cover, and refrigerate for at least 1 hour or up to overnight.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Preheat grill or grill pan over medium-high heat and lightly oil the grates.
  5. Thread the marinated chicken pieces onto the skewers.
  6. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  7. Remove from grill and garnish with chopped green onions and sesame seeds if desired.
  8. Serve hot with rice or your favorite side dishes.

Notes

  • For extra flavor, reserve some marinade before adding chicken and simmer it to make a dipping sauce.
  • Substitute chicken breast if preferred, but adjust cook time to avoid dryness.
  • Pair with pickled vegetables or a fresh cucumber salad for balance.
