- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon honey
- 1 tablespoon vegetable oil (for grilling)
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
- Wooden or metal skewers
- In a large bowl, mix soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, gochujang, and honey to make the marinade.
- Add the chicken pieces to the marinade, cover, and refrigerate for at least 1 hour or up to overnight.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat grill or grill pan over medium-high heat and lightly oil the grates.
- Thread the marinated chicken pieces onto the skewers.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Remove from grill and garnish with chopped green onions and sesame seeds if desired.
- Serve hot with rice or your favorite side dishes.
