- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Lemon wedges, for serving
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, parsley, dill, salt, and pepper.
- Place salmon fillets in a resealable plastic bag or shallow dish and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Remove salmon from marinade and place on the grill, skin-side down if applicable.
- Grill for 4-5 minutes per side, or until the salmon flakes easily with a fork.
- Remove from grill and serve immediately with lemon wedges.
Notes
- You can substitute dried herbs if fresh ones are not available; use 1 teaspoon dried for every tablespoon fresh.
- This recipe works well with other fish like trout or halibut.
- For extra flavor, reserve some marinade (before adding raw fish) and drizzle it over the cooked salmon.
