- 2 cups coconut milk
- 1 cup heavy cream
- 3/4 cup sugar
- 1/4 cup lime juice (freshly squeezed)
- 1 tablespoon lime zest
- 1/2 cup shredded coconut (unsweetened)
- Pinch of salt
Instructions
- In a medium saucepan, combine the coconut milk, heavy cream, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the mixture is warm (but not boiling).
- Remove the saucepan from heat and stir in the lime juice and lime zest.
- Let the mixture cool to room temperature, then refrigerate for at least 2 hours, or until well chilled.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually for about 20–25 minutes.
- During the last few minutes of churning, add the shredded coconut to the ice cream maker.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
- Serve and enjoy the tropical lime coconut cream ice cream!
Notes
- If you prefer a creamier texture, use full-fat coconut milk.
- For extra coconut flavor, toast the shredded coconut before adding it to the ice cream.
- If you don’t have an ice cream maker, you can freeze the mixture in a shallow dish, stirring every 30 minutes for the first 2-3 hours to prevent ice crystals from forming.
