Lime Coconut Cream Ice Cream

A refreshing, creamy ice cream with the tropical flavors of lime and coconut, perfect for hot summer days.

  • 2 cups coconut milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1/4 cup lime juice (freshly squeezed)
  • 1 tablespoon lime zest
  • 1/2 cup shredded coconut (unsweetened)
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the coconut milk, heavy cream, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the mixture is warm (but not boiling).
  2. Remove the saucepan from heat and stir in the lime juice and lime zest.
  3. Let the mixture cool to room temperature, then refrigerate for at least 2 hours, or until well chilled.
  4. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually for about 20–25 minutes.
  5. During the last few minutes of churning, add the shredded coconut to the ice cream maker.
  6. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
  7. Serve and enjoy the tropical lime coconut cream ice cream!

Notes

  • If you prefer a creamier texture, use full-fat coconut milk.
  • For extra coconut flavor, toast the shredded coconut before adding it to the ice cream.
  • If you don’t have an ice cream maker, you can freeze the mixture in a shallow dish, stirring every 30 minutes for the first 2-3 hours to prevent ice crystals from forming.
